Ms Head’s simple recipe could be a welcome distraction for the five million Sydneysiders stuck in lockdown.

New South Wales on Sunday recorded 77 new local Covid cases and one death, with state premier Gladys Berejiklian warning daily cases are likely to rise above 100 over the coming days.

To make the cake, Ms Head said she melts 145 grams of salted butter and mixes it with 360 grams of granulated sugar, 120 grams of plain flour and 60 grams of cocoa powder.

She adds in three large eggs, lightly beaten, before stirring the mixture until it is smooth.

Ms Head then pours the mixture into a seven-inch spring form tin and bakes it in an oven set to 160 degrees Celsius for 30 to 35 minutes.

‘The top should be crisp and set, and the centre should still gooey,’ Ms Head added.

She said the cake should be left to cool fully in the tin before being stored in the fridge and reheated if desired.
